皇菊的有益成分含量及其可食用性分析

摘要 以从江西婺源成功引种到成都平原地区，并通过无公栽培技术而获得的皇菊花为材料，对花朵中的某些有益成分进行了初步的分析测定和探索，同时将这些物质对人体的益处进行了一些整理，为人们在对该菊花品种的食用方面提供参考，为该产业开辟新的发展途径而提供依据。检测结果表明，这一菊花中含有黄酮、锌、硒、叶黄素等有益物质，具有较高的保健价值和良好的发展前景，值得进一步研究开发。

Analysis of the Beneficial Components and Edibility of the Imperial Chrysanthemum

Abstract Taking the imperial chrysanthemum which was obtained by pollutantfree cultivation since it was successfully introduced into the Chengdu Plain from Wuyuan， Jiangxi Province as experimental material， some of the beneficial components of flower were preliminary determined and explored， and the benefits of these substances to the human body were analyzed， providing people with a reference for the edibility of chrysanthemum varieties ，and providing the basis for new ways of development of the industry. The results showed that the imperial chrysanthemum contains flavonoid， zinc， selenium， lutein and other beneficial substances， which have high health value and good prospects for development， and it is worthy to be further researched and developed.

菊花（Chrysanthemum morifolium）起源于中国，是我国的传统名花，除观赏外还有较高的食用、保健等价值。皇菊为菊科菊属多年生草本植物，是我国传统的常用中药材之一，主要以头状花序供药用。据古籍记载，皇菊味甘苦，性微寒，有散风清热、清肝明目和解毒消炎等作用，对口干、火旺、目澀，或由风、寒、湿引起的肢体疼痛、麻木的疾病均有一定的疗效。

婺源皇菊，也叫晓起皇菊，按照花瓣颜色分类属于黄菊的一种，因起源于江西上晓起村而得名。作为一种理想的茶用菊花，因其独特的口感和淡淡的花香受到许多食客的追捧，近年来在各大媒体和中央电视台均有报道。该菊花因其气味芳香，回口甘甜，可消暑生津、袪风、润喉、养目、解酒等备受青睐。其花瓣中含有的多种氨基酸、维生素、微量元素、黄酮类物质，这些大部分也能在泡饮中渗透到水中，具有降血压、消除癌细胞、扩张冠状动脉和抑菌的作用，长期饮用能增加人体钙质、调节心肌功能、降低胆固醇。……
