新冠疫情下餐饮业财务管理影响以及应对

摘要：2020年初爆发的新冠疫情对餐饮业这种生活性服务业冲击比较大，餐饮企业面临现金流枯竭、财务风险加大、财务管理时效性减弱、经营成本居高不下等一系列财务管理问题，本文通过对这些问题的分析， 提出了六点科学有效的应对措施，以保证餐饮企业基本业务有条不紊的运行，减少疫情带来的诸多负面影响，使企业能够在疫情环境下持续健康的发展。

Abstract： The outbreak of the COVID-19 epidemic in early 2020 has had a greater impact on the catering industry， a lifestyle service industry. Catering companies are facing a series of financial management issues such as depletion of cash flow， increased financial risks， weakened financial management timeliness and high operating costs. Through analysis of these issues， this article proposes six scientific and effective countermeasures to ensure the orderly operation of the basic business of catering enterprises， reduce the many negative impacts caused by the epidemic， and enable the company to continue its healthy development in an epidemic environment.

0  引言

财务管理是企业组织财务活动、处理与各方面财务关系的一项经济管理工作，在餐饮业发展中起着其不可或缺的作用。面对突如其来的新冠疫情，据美国标普公司预测，中国2020年一季度GDP增长率放缓至4%左右，并且据中国证监会上市部调研，中国有八成企业遭受重创，营业收入水平显著降低。在如此低迷的经济走势下，餐饮业也难逃一劫，再加上餐饮业本身竞争压力大、面临风险多，因此及时识别处理疫情给财务管理带来的不利影响，制定科学有效的财务管理措施能够为特殊时期餐饮企业的持续发展提供坚实保障。

1  新冠疫情对餐饮行业财务管理的影响

由于新冠疫情的突发性、偶然性、多变性、破坏性，再加上普通餐饮企业财务管理体制的脆弱性，企业很难在如此仓促的时间内创新财务管理体制，保障财务管理正常运转，因此餐饮企业在面对突发公共卫生事件时，财务管理往往首当其冲。……
