唐山市食品安全抽检样品不合格原因分析

摘 要：目的：分析唐山市2020年食品安全的整体情况，发现其中存在的主要问题。方法：对2020年唐山市食品安全监督抽检结果进行汇总（国抽、省抽、市抽以及县抽），从不同角度分析其中的问题。结果：2020年唐山市境内共抽检52 162批次样品，其中不合格或问题样品1 096批次，整体不合格或问题率为2.1%。结论：唐山市食品安全状况整体良好，但仍有部分食品大类的食品问题较大，需要进一步加强治理，提升食品安全监管水平。

Analysis of Unqualified Food Safety Samples in Tangshan

Abstract： Objective： The aim of this paper was to analyze the overall situation of food safety in Tangshan in 2020 and find out the main problems.  Methods： The sampling inspection results of food safety supervision in Tangshan in 2020 were summarized （national sampling， provincial sampling， municipal sampling and county sampling）， and the existing problems were analyzed from different perspectives. Results： In 2020， a total of 52162 batches of samples were sampled in Tangshan city， of which 1096 batches were unqualified and problematic samples， with an overall unqualified and problematic rate of 2.1%. Conclusion： The overall food safety situation in Tangshan is good， but there are still some food problems in some food categories， which need to be further strengthened to improve the level of food safety supervision.

俗话说“民以食为天”，食物是人类赖以生存的物质基础。粮食、食用油、蔬菜、水果、肉类、禽类、水产品、蛋类、乳类、糕点、糖果、罐头、饮料、豆制品和调味品等都属于食品。食品安全直接关系到人们的身体健康和生命安全，也关系到经济发展和社会稳定，具有重要作用。本研究通过对2020年唐山市食品安全监督抽检数据进行汇总和分析，与国家市场监管总局发布的《2020年食品安全抽检品种、项目表》[1]进行对比，分析抽检不合格项目类型情况、不合格或问题项目占比等。抽检标准依照国家质量监督检验检疫总局和国家标准化管理委员会颁发的《食品抽样检验通用导则》（GB/T 30642—2014）[2]。

1 材料与方法

1.1 数据来源

整理唐山市市场监督管理局发布的2020年食品安全抽检监测数据，以此为依据进行分析。

1.2 判定方法

食品安全抽检分为监督抽检和风险监测。监督抽检一般都是依据国家标准判定，判定结论是否合格，可以作为处罚依据。……
