可视化检测方法在食品安全检测中的应用研究进展

摘 要：食品安全問题关乎民生及国家安全，越来越引起人们的关注，并逐渐成为了一个社会焦点和热点问题。提高食品安全检测效率，对于保障食品安全具有重要的意义。可视化检测方法在提高检测效率、简化检测步骤、节省检测时间及成本方面具有很大的优势，是今后食品安全检测发展的一个方向。本文探讨了可视化检测方法在食品安全检测中的具体应用实例，以期为相关研究人员提供参考和思路。

Progress on Application of Visual Detection Methods on Food Safety Detection

Abstract： Food safety issues are related to people's livelihood and national security， and have attracted more and more people's attention， and have gradually became a social focus and hot issue. Improving the efficiency of food safety detection is of great significance for ensuring food safety. Visual detection methods have great advantages in improving detection efficiency， simplifying detection steps， saving detection time and cost， and are development direction of food safety detection in the future. This article discusses specific application examples of visual detection methods on food safety detection， to provide references and ideas for relevant researchers.

随着生活水平和质量的不断提高，人们已经由追求“吃饱”到追求“吃好”，对于食品安全尤其重视。近年来，我国虽然食品安全整体较好，但也经常出现一些食品安全事件，如瘦肉精事件、地沟油等。目前，传统的食品安全检测在检测效率、成本、时间等方面已经难以满足快速检测的要求了，因此，必须加大对高效、快速检测的研究，以满足实现快速食品安全检测的目的。可视化检测方法的出现为实现高效、快速检测提供了思路和方法，本文从可视化检测在食源性致病菌、重金属离子、药物残留、生物毒素、食品非法添加剂检测方面的应用实例进行了探讨。

1 可视化检测方法在食源性致病菌检测方面的应用

目前，国内主要应用国标法对食品中食源性致病菌进行检测，虽然国标法能够实现对食源性致病菌的检测，但是工作量较大，耗时较长，无法满足对食源性致病菌快速检测的要求。……
